2022: Appeared in all 14 games for the Cardinals grabbing 15 TD’s and 1,221 yards on 83 catches this season. Grimes was named to the 2022 All-American Second Team, 2022 SLC All-Conference First-Team Selection and the 2022 Phil Steel All-America Team.

2021: Appearing 12 games for the Cardinals in 2021, Grimes led the team in receptions (87), receiving yards (1145), and touchdowns (16). Grimes had 6 games totaling over 100 yards, and 3 games where he scored 3 touchdowns or more. Highlighted by explosive games against Nicholls State University, where he had 9-182-4 stat line and a 12-193-3 line against Southeastern Louisiana University 3 weeks later. 
 
Grimes concluded his historic 2021 season with a 2^nd-team NCAA FCS All-America bid, while winning the Southland Conference Newcomer of the Year award. Grimes broke numerous UW records this past season including, single game receiving touchdowns (4), receiving yards in a game (193), receptions in a game (12), single season receiving yards (1145) and receiving touchdowns (15)
